Banana and Blueberry Cake with Cream Cheese Frosting

A heavenly combination of Bananas and Blueberries gets harmonised with a tangy cream cheese frosting that melts in your mouth right away. Check out the recipe of banana and blueberry cake with cream cheese frosting.

Serving : 8 persons

Ingredients:

For Banana Blueberry cake:

1.33 cups cake flour
1.33 tsp baking powder
0.17 tsp salt
0.33 cup unsalted butter
0.67 tsp vanilla
2 medium overripe bananas
0.33 cup buttermilk
0.67 cup blueberries (frozen or fresh)

Frosting:

0.67 cup unsalted butter
118 ml cream cheese
2 cups powdered sugar
0.67 tsp vanilla

Method:

1. Preheat the oven at 180o C and grease the mould with butter and flour. 2. Whisk cake flour, salt, and baking powder in a medium bowl. Set aside the batter to rise. 3. Now beat butter till even by electric whisker or hands. After that add sugar and beat on med-high until pale and fluffy (approx., 2-3 minutes). 4. Decrease the speed and eggs one at a time, fully combining one after another. 5. Next, add vanilla and mashed bananas and mix well up until ingredients combined. 6. Another addition, flour mixture and buttermilk starting and completion with flour (3 additions of lour and 2 of milk). Fully combine after each adding. But don’t over mix. 7. Now gently put the blueberries without breaking them. 8. Put batter evenly into the prepared mould and bake for 30 minutes or until a toothpick placed in in the centre comes out mostly clean. 9. Now place the cake on a wire rack to cool for 10 minutes.

Preparing cream cheese frosting:

Firstly, beat the butter and cheese cream until fluffy. Then, add powdered sugar one cup at a time and add vanilla and beat until fluffy.

Assembly:

1. Put a layer of cake on a cake stand or serving plate. Then, top it with 2/3 cup of frosting. Now, repeat the process with each layer and apply a thin coat of frosting all over the cake. 2. Refrigerate it for 20 minutes. 3. After refrigeration put the remaining cream on the cake and spread the frosting as desired. 4. Garnish with fresh blueberries and thyme springs (if desired).
