Ingredients:
Cake flour – 1-1 ½ cup
Sugar – 1 cup
Baking soda – 1 teaspoon
Salt – ½ teaspoon
Unsweetened chocolate – 2 ounces
Butter – 2 tablespoons
Buttermilk – 1 cup
Canola oil – ½ cup
Egg – 1
Vanilla extract – 1 teaspoon
Method:
Combine the sugar, baking soda, salt and flour in a large bowl and sets it aside.
In a microwave bowl, combine the butter and chocolate. Cover it and microwave I on a high for about 1 minute. Stir and cook it 30 seconds longer or until melted.
In a small bowl, combine egg, oil and buttermilk. Add the chocolate mixture and vanilla.
Pour into an 8 inch square baking dish and bake it at around 350 degrees centigrade for about 30-35 minutes or until a toothpick inserted at the center of the cake comes out extremely clean. Cool it completely on a wire rack.
For frosting purpose, combine the cornstarch, chocolate, sugar and salt in a saucepan. Stir in the coffee until blended. Boil it over a medium heat. Cook and stir the mixture until it is thickened.
Remove from the heat and stir in butter and vanilla and then spread warm frosting over the cake.
Nutritional Values : One serving equals 390 calories, 16 g fat, 28 mg cholesterol, 359 mg sodium, 54 g carbohydrate, 1g fiber and 3 g protein.
