Cup Cake Recipe

Cupcake, as the name suggests, is a small cake prepared to serve one person and is baked in a small thin paper or aluminum cup. They come in different variants and are very popular among one and all. One such variety is mocha chocolate chip cupcake which uses coffee powder to provide a unique taste.

Preparation Time : 25 minutes

Serving : 15 People

Ingredients:

Eggs – 2
Softened unsalted butter – 125 gm
Milk – ½ cup
Vanilla essence – 1 tsp
Caster sugar – 1 cup
Self raising flour – 2 cups
Instant coffee powder – 2 tsp
Chocolate chips – ½ cup
Icing Icing sugar – 1 ½ cups.
Softened butter – 125 gm.
Instant coffee powder – 1 tsp
Chocolate chips – for decoration

Method:

Preheat oven to 180 degrees centigrade before baking.
In a medium sized bowl, lightly beat the eggs, add butter and sugar then mix them all until light and fluffy.
Add vanilla essence, instant coffee, flour and milk and stir them to combine.
Then beat with the electric mixture for about 2 minutes until light and fluffy.
Stir through the chocolate chips in the mixture.
Divide the mixture in the prepared cupcake tin.
Then bake for 17-20 minutes until the mixture rises and feel firm to touch.
Cool for a few minutes then transfer the mixture to cool it completely on a wire rack.
Icing- mix together the butter, coffee and icing sugar until when combined then beat it until light and fluffy.
You can use a piping bag with a nozzle to pipe the icing on the cake or you can use a knife to spread the icing on the cake.
Use chocolate chips to decorate.

Nutritional Values : One mocha chocolate chip cupcake equals 122.4 calories, total fat 1.4 gm, sodium 64.3 mg, total carbohydrate 26.2 gm and protein 2.5 gm.
