Ingredients:
For Banana Bread :
Cooking Spray
½ cup melted butter
¾ cup sugar
2 large eggs
¼ cup whole milk
1 tsp pure vanilla extract
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon (powdered)
¼ tsp salt
¼ tsp ground nutmeg
3 large mashed bananas (ripe or overripe)
¼ cups finely grated carrots
¼ chopped pecans, plus more for garish
For Frosting :
225g block cream cheese (softened)
1 cup softened butter
1 tsp vanilla extract pure
¼ tsp salt
½ powdered sugar
Method:
1. Preheat the oven at 10oC and grease the pan or mould with cooking spray.
2. In a bowl mix the butter and sugar until completely mixed. After that, add milk, eggs, and vanilla and mix it up until smooth.
3. Next, deliberately add flour, baking soda, baking powder, cinnamon, nutmeg, and salt and stir until completely incorporated.
4. After mixing them, gently fold in bananas, pecans, and carrots and mix it up until fully combined.
5. Now take out the pan or mould from the oven and pour the batter into it. Make sure to flatten the top.
6. Next, put the cake into the oven and bake it for 1 hour, until the toothpick comes out smooth.
7. Once done take out the cake and let it cool down.
For Frosting :
Take a large bowl and put cream cheese and butter and stir it using a hand mixer until smooth.
Next, add in the vanilla, powdered sugar, and salt and beat it until fluffy.
Assembling the Cake :
Take the cooled down cake and frost it and garnish it with pecans.
Your carrot cake with banana bread is ready to serve.
