Banana Pecan Muffins Recipe

Banana Pecan muffins are a perfect kind of muffins with an added flavor of bananas and pecans in it. They are very easy to make and are a very perfect dessert material.
Best part about Banana Pecan Muffins is that you can easily prepare them in large numbers at one instant and can reheat them whenever you feel like having a bite of this fantastic muffin.

Preparation Time : 20 - 30 minutes

Serving : 12 People

Ingredients:

2 cups of mashed bananas
melted butter- 1/3 cup
1 egg
vanilla- 1 teaspoon
grated orange rind- 1 teaspoon
all purpose flour- 1- 1 ½ cup
granulated sugar- ½ cup (or as according to your requirement)
baking powder- 1 teaspoon
baking soda- 1 teaspoon
chopped dates- ½ cup
chopped pecans- ½ cup
salt- ½ teaspoon

Method:

whiff up the bananas, eggs, butter, orange rind and vanilla together in a medium sized bowl
While in a large bowl, sieve together baking powder, sugar, flour, salt and baking soda.
Add pecans and dates in the mixture and toss it lightly
Then pour in the banana mixture and keep on stirring until fully combined.
Pour the mixture in the paper lined muffin cups.
Bake the muffins at about 180 degrees centigrade in the oven for at least 15 minutes or until the muffin rise enough and seem solid on touch.
Let it be cooled on a wire rack.
To reheat it, place the muffins in the paper bags and warm it at a temperature of about 150 degrees centigrade

Nutritional values : Each muffin contains carbohydrates 15%, vitamin C 7%, calcium 2%, iron 15% and quite a good amount of calories.
