Banana and butterscotch loaf is a delicious version of usual, traditional banana loaf which is moist, soft and rich in taste.
The combination of butterscotch and banana is exquisite and you will find sweet, butterscotch chunks inside as well as outside of this.

Ingredients:
1. Butter – for grease
2. Plain flour – 175 g
3. Baking powder – 2 teaspoons
4. Bicarbonate salt and soda – ½ tsp
5. Muscovado light sugar – 175 g
6. Eggs – 2
7. Ripe medium-sized mashed bananas – 3
8. Butterscotch chocolate chunks – 150 g
9. Yogurt – 150 g
10. Demerara sugar – 1-2 tablespoon

Preheat oven on 1700 C.
Grease as well as line 1.4 kg loaf tray with a greaseproof or butter paper
In a large bowl pour flour, bicarbonate of salt and soda and baking powder and mix all these together very well
Now in a separate large bowl beat egg and sugar very well until they become fluffy and pale
Now mix and stir chocolate, mashed bananas, 50 g pecans and yogurt in egg and sugar bowl.
Now pour flour mixture into egg and Sugar bowl and beat all ingredients gently.
Now spoon that mixture into the greased tin or tray and sprinkle demerara sugar and remaining pecans on it.
Bake that mixture for 1 hr
After 1 hr insert a skewer into the loaf in order to check whether it is ready or not.
If the skewer comes out clean, this means that your loaf is ready cool and serves.
