Hummingbird Cake is a unique name & there are several sources to explain this unique name. We all know that Bananas & pineapples originated from Jamaica & the national bird of Jamaica is Hummingbird.
Preparation Time : 15 minutes & 50 minutes
Serving : 12 to 16 People
Ingredients:
Crushed pineapple juice – 1 x 440 gm.
Greased Melt Butter
Mashed banana overripe – 1 cup
Passion Fruit Pulp – 60 ml.(1/4 cup)
Caster Sugar – 215 gm.(1 cup)
Gently whisked – 2 eggs
Unsalted Melt Butter – 150 gm.
Sifted self-raising flour – 265 gm.(1 ¾ cups)
Ground Cinnamon – 2 tsp
At room temperature cream cheese packet – 1x 250 gm.
At room temperature unsalted butter – 60 gm.
Iced sugar mixture – 125 gm.(3/4 cup)
Method:
Oven preheated to 170°C.Whisk around 22 cm cake pan with soften butter to lightly whisked. Cover the base with non-stick baking paper.
Exhaust pineapple, retain 1 tablespoon of juice. Mixed the banana, pineapple, passion fruit pulp, egg & sugar in a big bowl. Blend in the butter & then put in the flour & cinnamon & splash until just mixed.
Serve into the arranged pan & bake for 1 hour & 10 minutes or until impale inserted into the centre comes out spotless. To cool set aside in pan for 5 minutes & go round on to a wire rack to chill completely.
For making the cheese cream icing make use of an electric beater to hit the cheese cream, till then butter, icing sugar & reserved pine apple juice in bowl becomes smooth. Expand over the top of cake & cut into pieces to serve.
Humming Bird Cake contains mashed bananas & bananas are rich in calories & fat therefore eat it in limit.
