Banana Cake Recipe with Maple-Caramel Sauce

Banana cakes are a mouth-watering delight that everyone loves. One of its luscious recipe is Banana Cake with Maple-Caramel Sauce. The sticky sauce makes it a treat for the entire family.

Preparation Time : 40-45 minutes

Baking Time : 55-70 minutes

Serving : 4 persons

Ingredients:

For Cake:

50g butter (softened), additional for greasing.
4 tbsp maple syrup
2 ripe bananas (small) and 1 overripe one
100g soft sugar (dark brown)
2 large eggs
1 tsp vanilla extract or paste
100g self-rising flour
50g crushed pecan
½ tsp soda bicarbonate
½ tsp cinnamon powder
100g full-fat Greek yogurt or vanilla ice cream for serving.

Sauce preparing:

50g pecan whole
50g salted butter, diced
50g double cream
50ml maple syrup

Method:

1. Preheat the oven to 160/140o C. Grease the cake mould with the butter. For the cake batter, pour half of the syrup, swirling to coat the bottom.
2. Now peel and halve the bananas lengthways, cut-side down, in the tin.
3. Next beat together the butter, eggs, sugar, vanilla, and overripe banana with a whisk or electric whisker.
4. Tip the pecans and flour into a food processor and pulsate until finely powdered together.
5. After that, stir into the butter mixture with bicarbonate soda and cinnamon, and then stir the yogurt. Now spoon it into the tin without extricating the bananas.
6. Furthermore, bake the cake for 45-60 minutes till the skewer come out with only moist crumbs.
7. While the bake is in the oven, toast the pecans for 1-2 minutes in a pan, and add the remaining ingredients and cook them up until the butter melts down completely.
8. Then bubble for 5 minutes till it has thickened a little.
9. When the cake is baked, nudge it all over with a skewer- inserting it about halfway into the cake every time.
10. Take the maple syrup and pour it over the remaining maple syrup and allow it to soak in for a few minutes, demould the cake on the serving plate.
11. Reheat the sauce, and serve the Banana Cake with Maple-Caramel Sauce with Greek yogurt or vanilla ice cream.
